Incredible vegan banana muffins!

Just made a batch of my favorite muffins. Incredibly quick and easy, with barely any sugar (unless you add chocolate chips!) The bananas hold everything together so you don’t even need an egg substitute. Nobody will even believe that these are vegan!
2 bananas
1/3 cup oil
1/4 cup water
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp salt
2 tbs turbinado sugar
cinnamon
walnuts or pecansĀ
chocolate chips (optional)
makes 6 muffins or one banana bread
400 degrees until tops are browned
I’ve also made a variation of this with chopped up zucchini. You don’t need the water if you use zucchini, in fact you should add a little more flour so that it is the right consistency. Also a little bit of nutmeg. When I do this I usually make zucchini banana bread instead of muffins.

Just made these again today. It only made 5 muffins cause I didn’t want small ones. I had two left and was going to save them for breakfast, but now they are gone!!
